We are seeking a proactive and experienced Food Procurement Supervisor / Sr. Supervisor to manage end-to-end procurement of food and beverage items. The ideal candidate will have deep knowledge of staples, perishables, dairy, groceries (imported & local), meat, and poultry, with proven expertise in vendor management, cost optimization, and compliance with food safety regulations.
Source, evaluate, and purchase perishable and non-perishable food items, beverages, and kitchen consumables based on requisitions.
Obtain and compare quotations from multiple suppliers and prepare comparative statements.
Create and track Purchase Orders in the ERP system to ensure timely delivery.
Coordinate closely with Executive Chefs and F&B Managers to ensure correct quality, quantity, and specifications.
Manage procurement of imported and specialty ingredients as per menu and seasonal needs.
Identify, onboard, and maintain a reliable supplier base for various F&B categories (produce, meat, seafood, dairy, grocery, bakery, beverages, etc.).
Maintain updated vendor data, rate contracts, and supplier performance metrics.
Ensure vendors comply with food safety, quality, and hygiene standards.
Conduct periodic vendor performance evaluations in coordination with kitchen and stores teams.
Negotiate with vendors to secure the best price, quality, and delivery terms.
Ensure purchases adhere to budget guidelines and company procurement policies.
Verify invoice rates and quantities against purchase orders and GRNs.
Assist the Cost Control team with price variance analysis and consumption tracking.
Maintain accurate procurement records, approvals, purchase orders, and delivery details.
Monitor pending orders and ensure timely fulfillment.
Prepare weekly and monthly procurement reports and supplier performance summaries.
Support internal and external audit processes with relevant documentation
Bachelor’s or Master’s degree in Business Administration, Commerce, Hospitality, Food Technology, Agro Business, or a related field.
Minimum 7+ years of experience in Hospitality / Food Procurement / Central Purchasing.
Experience managing a procurement volume of at least ₹100 Cr annually.
Hands-on experience with SAP or other ERP systems (IDS, Oracle, Material Control preferred).
Strong understanding of FSSAI guidelines, food safety laws, and import procedures (FTA, documentation, etc.).
Proficiency in MS Excel, Word, and PowerPoint.
Strong understanding of food categories and ingredients.
Excellent negotiation and vendor management skills.
Strong analytical ability and attention to detail.
Proficiency in MS Office and ERP systems (SAP / IDS / Oracle).
Excellent communication and coordination skills.
Knowledge of FSSAI standards and food safety regulations.
